Chicken Corn Chowder

Since it is cold outside, and according to the weatherman, only about to get colder, I thought I'd post this recipe in case you want to make it.

Let me start off by saying, I'm not really a soup person. I like Gumbo, a couple of bisques, a few soups and that's about it. Stew...forget about it! Anyway, this is one of the soups that gets my stamp of approval and in fact, I usually end up making it several times over the course of a winter season because it is yummy and so very easy & quick to make (like less than 30 minutes!). I'll give you the recipe down below, but here is what I do to make it...



You're going to need some cooked chicken.

On Saturday, I just threw some frozen chicken breasts into the crock pot. You could also boil it, use rotisserie chicken, or heck, I think even use canned chicken in a pinch.


After it is done, cube it, shred it, whatever is your preference...
As a famous blogger says, "Here is the Cast of Characters"
(all except minced onion...seems I was out...oops)
You just literally dump it all into the pot...

Stir it up and let it heat...
That's it! Just wait on it to get hot and stir it frequently until it does!
Salt and Pepper to taste
Yummy!


Chicken Corn Chowder Recipe

3 cups cubed cooked chicken
2 cups milk
4 oz. American cheese
1- 10 3/4 ounce can cream of potato soup
1- 12 ounce can Mexicorn
1 cup sliced carrots
1 chicken bouillon cube
1/2 teaspoon celery seed
1 Tablespoon minced onion
Put it all into a pot and cook over a low heat (usually I'm impatient and cook over medium heat) until thoroughly heated and the cheese is melted. Salt and Pepper to taste.

Ummm...sounds Yummy. I've been loving the PW chicken noodle soup and Sunset Magazine's tortilla soup this winter. The family will be excited to have a new soup added to the mix!!

Swiss Oatmeal {Copy Cat Recipe}

I'm obsessed with Swiss Oatmeal.  I particularly love   Corner Bakery's Swiss Oatmeal.  If you are not familiar with Swiss Oatmeal, it is a cold oatmeal cereal with fruit and nuts. Europe 2023 {Day 9 ~ Munich & Bavarian Alps}

 On Tuesday, December 20th I grabbed breakfast at the hotel and then walked about 15 minutes to where I met my tour for the day.  On my first visit to Munich, I only had time for one "day trip" outside of the city and I chose to go to Dachau Concentration Camp Memorial, but I always knew I wanted to venture down to the Bavarian Alps and see some castles on my next visit.  I had booked the premium tour and it was so fancy.  There was a snack bar and they even served beer and wine on the way home after the last stop of the day.  First stop was at Linderhof Castle.
