Seattle/Victoria Trip {Day 2}

Day 2 of our trip was really going to be our only full day in Seattle.  We hit the ground running and went to breakfast in Pike Place Market at the Crumpet Shop.
Egg, Cream Cheese, & Ham Crumpet with Earl Grey tea...
After breakfast we walked down to the Seattle Aquarium.  Before going in, we checked out the view around the pier...

I loved this yellow spotted fish.  Check out it's lips...

Time for Otter Overload...
I'm really sorry, but I absolutely adore otters...
We watched the otters play, eat, groom, nap...
and while I'm subjecting you to a ton of otter photos, just be thankful I'm not showing you the videos I took too!

They didn't just have sea otters, but they had river otters too!
After the aquarium, we walked to our lunch location in Downtown Seattle.  I had not realized that Seattle was very similar to San Francisco... many steep hills!  So we got in quite a workout on our walk to lunch, because it involved climbing many stairs and hills!  For lunch, we went to one of Tom Douglas' restaurants called Dahlia Lounge.
We each had the grilled cheese & ham and tomato soup.  It was delicious...
For dessert, there was a coconut cream pie...
and homemade donuts served with homemade strawberry preserves and mascarpone cheese...
This is seriously one of the top foods I've ever had in my life!

After lunch, the flagship Nordstrom was calling me home.  Y'all, it is a glorious place.  I texted some friends that I could hear angels singing as I walked through the doors.
After we tore ourselves away from Nordstrom, we walked across the street and took the monorail to the Space Needle.

The Chihuly Garden and Glass is located at the base of the Space Needle.  I was very excited about seeing it since I had loved Chihuly at the Dallas Arboretum so much.

I know it's hard to believe, but I really did cull through my photos and am only posting a few.
Many of the Chihuly pieces here had an ocean theme...

I think this ceiling may have been my favorite.  Probably because it was so different from anything that was in the Dallas exhibit.

This glass room was the reason I had hope to visit at night.  I know it is spectacular with the space needle lit up, but it was still pretty great.

After Chihuly, we went up to the top of the Space Needle.

First, I spotted our hotel...

Then I walked around and got a great view of the city, and because the weather was so fabulous and un-Seattle like, great views of the surrounding area too.

After the Space Needle, we went back to the hotel and got ready for dinner.  On our way to dinner, we had the taxi take a detour to Kerry Park.  We had read that you could get great "postcard views" of the city, and boy was that right.
It's actually just a tiny little park.  People live less than 40 yards from here, and this is their view.  Can you imagine?
I think this is a must see for anyone visiting Seattle.

We went to another Tom Douglas restaurant for dinner, Etta's.

I tried a crab cake...
and their famous salmon.  It was so good, I bought some of the rub they use, and I'm having it for dinner tonight!

After dinner, we went back to the hotel to pack up, because we had an early ferry to catch the next morning.  Stay tuned for Day 3 as we travel up to Victoria, British Columbia...

Yay Seattle!! It looks like you were here on a beautiful day, your views from Kerry Park were unreal! It was totally surprised at the size the first time I visited too, but the view more than makes up for it. Also, I'm glad that you were able to try some of Tom Douglas's restaurants, they're some of my favorites. Yummy!

I hope you had a fantastic time here :)

Oh, and fun fact: we had our law prom (Barrister's Ball) at the Seattle Aquarium my first year. Very fun!

Swiss Oatmeal {Copy Cat Recipe}

I'm obsessed with Swiss Oatmeal.  I particularly love   Corner Bakery's Swiss Oatmeal.  If you are not familiar with Swiss Oatmeal, it is a cold oatmeal cereal with fruit and nuts. I've had a similar recipe for years, but it was only similar.  It wasn't close enough for my liking.  So I finally set out into the land of Pinterest to find a recipe that was a good Copy Cat.  I found a few, combined them and came up with what I think is a very close Copy Cat Recipe of Corner Bakery's Swiss Oatmeal. Here's what I do (note, this recipe is really just pictures, because I don't really have measurements for these things.  The photos aren't great, but it's easier if I show you what I do)... Here's the Phase 1 ingredients...   Milk Honey Yogurt (I use a vanilla greek yogurt) Oats (old fashioned, not quick...you probably could do steel cut too)    I've simplified this to where you only need a bowl and a spoon for Phase 1 becau

Europe 2023 {Day 9 ~ Munich & Bavarian Alps}

 On Tuesday, December 20th I grabbed breakfast at the hotel and then walked about 15 minutes to where I met my tour for the day.  On my first visit to Munich, I only had time for one "day trip" outside of the city and I chose to go to Dachau Concentration Camp Memorial, but I always knew I wanted to venture down to the Bavarian Alps and see some castles on my next visit.  I had booked the premium tour and it was so fancy.  There was a snack bar and they even served beer and wine on the way home after the last stop of the day.  First stop was at Linderhof Castle. This was a "small" castle of King Ludwig's that was a partial mini-replica of Versailles.  It was a snowy walk to the castle... Interior photos were not allowed, but you can see some pics of the interior HERE Like Versailles, there are fountains and sculptures surrounding Linderhof, but they cover the statues with wood huts to protect them from the winter elements. After visiting Linderhof, we made a (to

It's all about the dress...

I mean I guess it's really all about getting married, but come on, you always anticipate the dress right?  Well holy moly folks!  Today a big secret was released to the press.  No, we still don't know which dress or tiara Kate will be wearing, but we heard for the first time that Princess Diana had a back-up dress!  Here are some of the pictures and sketches... Real dress on Left~ Back-up on the Right Here are the sketches of the back-up dress And you know what?  I like the back-up dress better than the one she wore!  I know, I know.  I'm going to get blasted for saying that, but I'll just confess it right now... My name is Kara and I've never thought Princess Diana's dress was all that and a bag of chips.  Nope.  Not my favorite Royal Wedding Dress by any stretch of the imagination.  What is my favorite?  Probably the one that Sarah Ferguson wore when she married Andrew... It had beautiful beading and stitching throughout.  Also on the train it had an &quo
