My favorites from Hello Fresh

As I told you back in May, I've been getting Hello Fresh.  As of today, I will receive my 15th Hello Fresh box.  I originally tried it because I got a coupon code for $40 off my first box.  There was no commitment, so I decided I would try 6 meals (3 different meals for 2 people) for $19.98.  I really loved it, and then started getting it on the weeks when there were 3 meals that week I was really jazzed about.  Now, I get it whether there are 3 I'm jazzed about or not.  It's so easy, a good value, and so good. Now my only complaint is that some weeks there are 6 options I REALLY want to try, and then the next week there are only 2 I REALLY want.  But that's just a me issue.  As far as real complaints, anytime I've ever received any produce that wasn't up to snuff, they gave me a credit to my account to make up for it. I've really loved many of the 45 recipes I've made so far, but some of my favorite recipes were easy ways to tweak tried and t...

Memorial Day Weekend 2013

I had a great memorial day weekend.  It was eventful enough, yet still relaxing.  I went to Nocona on Friday.  My parents were out of town, and I planned to use the pool and relax for a couple of days.  Unfortunately, after they left town on Monday, a terrible tornado producing, high wind, and hail storm rolled through town.  Luckily a tornado didn't hit in town, but wow, they had a lot of storm mess that needed to be cleaned up.  I went to visit with my Meme and then I headed back home for clean-up.  These pics don't really do the damage justice, but you get the drift... I didn't do any relaxing on Friday.  I spent about 4 hours in clean-up mode.   Saturday morning, I drove over to Saint Jo, to visit my other grandparents.  My grandmother and I went on to Muenster to the meat market so I could stock my freezer up on some meat for grilling and pick up some sausage and cheese at the request of Jennifer and her family....

Cooking with Pinterest

This semester, I'm not teaching any night classes.  I teach in the daytime (I kind of take a long lunch two days a week), and then I'll have another one of those weekend classes that lasts 3 weekends in April.  I haven't had every night free in almost 5 years !  I'm finally getting used to actually keeping food in the house to cook dinner every night.   Being sick of the same old stuff, I've been hitting Pinterest up for new ideas.  The past 2 weeks I've had great success as finding good things to cook.  Here are 3 of the thumbs up recipes: (1) I like to cook several things that need cooked chicken as a base.  I tend to either boil the chicken, or put it in the crock pot to cook, but then it just tastes so blah.  I ran across this recipe for a great way to cook chicken with flavor... (2) I have been having a real craving for Broccoli Beef and this was a good recipe ... (3) I made this recipe for Lasagna Rolls, but I tweak...

Swiss Oatmeal {Copy Cat Recipe}

I'm obsessed with Swiss Oatmeal.  I particularly love   Corner Bakery's Swiss Oatmeal.  If you are not familiar with Swiss Oatmeal, it is a cold oatmeal cereal with fruit and nuts. I've had a similar recipe for years, but it was only similar.  It wasn't close enough for my liking.  So I finally set out into the land of Pinterest to find a recipe that was a good Copy Cat.  I found a few, combined them and came up with what I think is a very close Copy Cat Recipe of Corner Bakery's Swiss Oatmeal. Here's what I do (note, this recipe is really just pictures, because I don't really have measurements for these things.  The photos aren't great, but it's easier if I show you what I do)... Here's the Phase 1 ingredients...   Milk Honey Yogurt (I use a vanilla greek yogurt) Oats (old fashioned, not quick...you probably could do steel cut too)    I've simplified this to where you only need a bowl and a spoon for Phase 1 becau...

Edgar ...
