Easter 2011

Easter 2011 = Food, Food & More Food!  Yesterday my grandmother cooked a huge lunch for everyone.  I caught a ride with my uncle and his family.  My grandma made lots of great food, including her annual bunny cake...
After lunch the little kids hunted eggs...

Everyone else went out to my granddad's lake to fish, but I went on to Nocona to visit with my other grandparents.  We got back to Dallas right at dinner time, so we stopped at Taco Diner and had some yummy fajitas (because clearly we needed MORE food!).

My uncle's wife, Kati, bought me a box of cupcakes at a new cupcake spot in Dallas called Gigi's...
They are so cute with the bunnies, chick and a crown.  They are really good too!  It's hard to have too much icing, but these kind of do.  I just lopped off some and they are perfect!  I tried a vanilla last night and had the strawberry for breakfast.  Yum-O!
As I was leaving their house last night they asked what I had planned for today.  My answer of "laundry" must have seemed pretty pathetic because I got an invite to joining them today for lunch at Fearing's.  I've wanted to try Fearing's ever since Dean Fearing left The Mansion to open his own restaurant at The Ritz, so of course I jumped at that opportunity.

It's a beautiful restaurant and the food was heavenly.  Dean even came out and spent a few minutes talking to us.

For the first course, I had the crab duo (with fried okra too)...
(all restaurant photos are iphone photos...sorry)

For the second course, I had the steak & eggs, which was served with a twice baked potato enchilada...
Dessert was a trio of desserts...
In the lobby they had this spectacular arrangement of tulips, hydrangeas, orchids and other things...

Oh!  How could I forget to mention that THE bunny stopped by our house and left goodies for my sweet Lola!

Enjoying her little squeeky bunny...
(yes, there are ALWAYS dog toys all over my house...she drags them out as quickly as I can pick them up)

Loving her new bone (a little bit of a blurry action shot for you!)...
I'm so stuffed that I'm not sure if I'm going to feel like eating ever again~but I think that is always a sign of a good holiday!  Hope you had a great Easter!

Swiss Oatmeal {Copy Cat Recipe}

I'm obsessed with Swiss Oatmeal.  I particularly love   Corner Bakery's Swiss Oatmeal.  If you are not familiar with Swiss Oatmeal, it is a cold oatmeal cereal with fruit and nuts. I've had a similar recipe for years, but it was only similar.  It wasn't close enough for my liking.  So I finally set out into the land of Pinterest to find a recipe that was a good Copy Cat.  I found a few, combined them and came up with what I think is a very close Copy Cat Recipe of Corner Bakery's Swiss Oatmeal. Here's what I do (note, this recipe is really just pictures, because I don't really have measurements for these things.  The photos aren't great, but it's easier if I show you what I do)... Here's the Phase 1 ingredients...   Milk Honey Yogurt (I use a vanilla greek yogurt) Oats (old fashioned, not quick...you probably could do steel cut too)    I've simplified this to where you only need a bowl and a spoon for Phase 1 becau
