The Celebration Begins

I've been a bad blogger again.  Originally, I was a bad blogger because it seriously looked like I was starting another jury trial on Tuesday.  I know that when I was a DA I did back to back jury trials all the time and that was no big deal.  I don't know if it's being on the other side that makes that more stressful or that I'm 10 years older now, but just the idea of it wore me smooth out!  Anyway, we came really close.  The jury was about to be called up to the courtroom and then the DA, bless his heart, offered us a deal that we had been trying for for months and months.  So we plead the case to a misdemeanor instead of a felony and were done.

Then I think I was just tired from the anticipation and all the work I had done over the weekend.  So I'm just no getting around to blogging about last weekends fun.

On Friday night, I went with my uncle Mark and his wife to dinner.  Mark's birthday was this past Monday and mine is next week, so we did a joint celebration dinner (that of course he paid for...duh!).  They took me to Ocean Prime, which I had never been to before.  It was beyond yummy.  I couldn't decide between steak or scallops, and then the waitress told me I could order steak and add some scallops which was perfect!

We ate SO MUCH.  Seriously, I wasn't hungry again until almost 24 hours later!  Here's what we had:

Yes, there were left overs.  I had part of my filet, part of Mark's filet and over half of Kati's Crab Crusted Tilapia for dinner on Saturday night along with our sides and carrot cake!

On Sunday, I went back to their house because my Grandparents were coming to celebrate Mark's Birthday.  We went for another great lunch at Pappadeaux and then had my grandmother's homemade Angel Food Cake. 
It is one of the best cakes on earth.
If you've only ever had Angel Food that you buy at a store, or that comes from a mix, then I cannot convey to you in words how wonderful this cake is.  Just imagine this:  I'm certain that they serve this in heaven.

Well that's it from me this week, because I'M HEADED TO LUBBOCK tomorrow!  I know most people don't get this excited about Lubbock, but I do!  I'm ready for a weekend of Football, Friends and some of my favorite food (of course). Wreck 'em Tech!

Oh, that Ocean Prime dinner looks delish! I love seafood and have always wanted to try scallops, but I haven't. Hope you have a good weekend!

Swiss Oatmeal {Copy Cat Recipe}

I'm obsessed with Swiss Oatmeal.  I particularly love   Corner Bakery's Swiss Oatmeal.  If you are not familiar with Swiss Oatmeal, it is a cold oatmeal cereal with fruit and nuts. I've had a similar recipe for years, but it was only similar.  It wasn't close enough for my liking.  So I finally set out into the land of Pinterest to find a recipe that was a good Copy Cat.  I found a few, combined them and came up with what I think is a very close Copy Cat Recipe of Corner Bakery's Swiss Oatmeal. Here's what I do (note, this recipe is really just pictures, because I don't really have measurements for these things.  The photos aren't great, but it's easier if I show you what I do)...
